Linzer Tart

Sometimes I eat hard-boiled eggs fo breakfast, but only the egg whites, because the load of fat of the yolks it’s overkill, I think, but I find myself at the weekend with a lot of egg yolks firm, still good and I never know what to do. Gemma, my little sister, really like them because they look like little suns: in fact for her is all a game and these little yellow balls are great fun. Because I do not like to throw things away, especially the food, I have recovered from a book of Montersino (Golosi di salute) a delicious recipe for sablée pastry. D i v i n e. Here’s the recipe 🙂 Ogni tanto, a colazione, mangio le uova sode, ma solo gli albumi perchè il carico di grassi ho paura che sia eccessivo, ma mi ritrovo a fine settimana con tanti tuorli sodi, ancora buoni e non so mai cosa farci. A Gemma, la mia sorellina, piacciono tantissimo perchè assomigliano a dei piccoli soli: in effetti per lei rappresenta tutto un gioco e queste piccole palline gialle sono molto divertenti. Siccome non amo buttare via le cose, il cibo soprattutto, ho recuperato da un libro di Montersino (Golosi di salute) una deliziosa ricetta di una pasta frolla sablée. D i v i n a. Ecco a voi la ricetta 🙂 Francesca Ingredients: For the pastry: 50 grams of powdered sugar 280 grams of butter 300 grams of flour 00 12 g rum (I put lemon juice) 125 g egg yolks firm (about 6) cinnamon lemon peel For the filling: 400 g of raspberry jam Whip butter “in the ointment” with powdered sugar, cinnamon powder, grated lemon peel and rum.  When the mixture will be foamy add the egg yolks firm and passed through a sieve, and complete the whole with flour, turning, however, as little as possible Then put the mixture into a pastry bag fitted with a nozzle rifled, and distribute it into the mold to form the bottom and an edge. Arrange the center of the raspberry jam then, always with the pastry bag, made out of line of pasta intertwined. Bake at 180 degrees for 15/20 minutes or, at least, until golden brown. Let cool completely before removing the tart from the mold. Ingredienti Per la frolla Linzer: 50 gr di zucchero a velo 280 gr di burro 300 gr di farina 12 gr rum 125 gr di tuorli sodi (sono circa 6) cannella in polvere buccia di limone q.b Per il ripieno: 400 gr di confettura di lamponi Montate il burro “in pomata” con lo zucchero a velo, la cannella in polvere, la buccia di limone grattugiata e il rum. Quando il composto risulterà spumoso unite i tuorli sodi e passati al setaccio e completate il tutto con la farina, girando, però il meno possibile A questo punto mettete l’impasto ottenuto in un sac à poche munito di bocchetta rigata, e dosatelo nello stampo formando il fondo e un bordo. Disponete al centro la confettura di lamponi quindi, sempre con il sac à poche, realizzate sopra delle righe di pasta intrecciata. Cuocete in forno a 180° per 15/20 minuti o, comunque, finchè non risulterà dorata. Lasciate raffreddare completamente prima di estrarre la crostata dallo stampo.

These are so cute! And look super yummy! you shouldn’t be afraid of the yolk in an egg! All the eggs vitamins and nutrients are in the yolk and you need a bit of fat to keep your hair and nails nice and shiny 😀
