Strawberry Cheese Cake

Un cheesecake alle fragole, quando prendono quei 10 minuti di irrefrenabile voglia di cucinare, è proprio quello che ci vuole. Fresco, estivo, semplice, i cheese cake come questo non richiedono troppe attenzioni, né procedimenti troppo complicati.
A strawberry cheesecake it’s the best cake ever when there are those 10 minutes of irrepressible desire to cook. Fresh, summery, simple, the cheesecake like this does not require too much attention, nor too complicated processes.
Ingredienti per la base:
  • 175 gr biscotti Digestive (prendete quelli che volete, io ho usato le Macine e non ho avuto problemi)
  • 40 gr burro morbido
  • fragole q.b.
Frullare i biscotti insieme al burro fino ad ottenere un composto sabbioso. Prendete il tutto e sbriciolatelo sul fondo di una forma da torta (perché no? anche di un bicchiere), aiutandovi con un cucchiaio, pressatelo fino ad ottenere uno strato compatto.
Tagliate a metà o un quoti le fragole e adagiatele sul fondo.
Ingredienti per il ripieno:
  • 350 gr Philadelphia (io ho fatto con quello light ed è venuto buonissimo)
  • 120 gr zucchero a velo
  • 125 gr yogurt
  • scorza di un limone (o qualche sua goccia di olio essenziale)
  • 10 gr colla di pesce
  • 200 gr panna montata
  • latte q.b.
Fate ammollare la colla di pesce in un po’ di acqua fredda, quindi fatela sciogliere in qualche cucchiaio di latte caldo.
Mischiate con una frusta il Philadelphia, lo yogurt, lo zucchero a velo e la scorza di limone; una volta che il composto è ben amalgamato, aggiungete la colla di pesce sciolta nel latte e continuate a mischiare. Poco a poco quindi aggiungete la panna montata e mischiate dall’alto verso il basso. Versate il composto sopra il fondo di biscotto e le fragole, mettete in frigorifero e aspettate le il vostro cheesecake si rapprenda.
Ingredienti per la gelatina di fragole:
  • due cucchiai di marmellata di fragole
  • quattro cucchiai di gelatina
Scaldate marmellata e gelatina in un pentolino e amalgamate bene. Con l’aiuto di un cucchiaio guarnite i vostri dolci e gustateli.
Ingredients for the base: 
  • 175 g Digestive biscuits
  • 40 g soft butter
  • strawberries q.b.
Mix the biscuits with the butter until the mixture is sandy. Take it all and crumble on the bottom of a cake form (why not even a glass), using a spoon, pressatelo to obtain a compact layer.
Halve strawberries and lay them on the bottom.
Ingredients for the filling: 
  • 350 g Philadelphia (I did with the light version)
  • 120 g icing sugar
  • 125 g yogurt
  • zest of one lemon (or a few drops of essential oil)
  • 10 g gelatine
  • 200 g whipped cream
  • milk q.b.
Soak the gelatine in a little bit of cold water, then let it dissolve in a few tablespoons of warm milk.
Mix with a whisk the Philadelphia, yogurt, icing sugar and lemon zest; once the mixture is well blended, add the gelatine dissolved in the milk and continue to mix. Little by little add the whipped cream and mix from top to bottom. Pour the mixture over the bottom of biscuit and strawberries, place in the refrigerator and wait for your cheesecake is curdled.
Ingredients for strawberry jelly:
  • two tablespoons of strawberry jam
  • four tablespoons of gelatine
Heat jam and jelly in a saucepan and mix well. With the help of a spoon garnish your cakes and enjoy them.
